I was reminded just how spectacularly, unexpectedly good southern Italian whites can be by a Slow Food wine dinner the other night at Flâneur to celebrate the publication of the English edition of their restaurant guide Osterie & Locande d’Italia. It was hosted by Feudi di San Gregorio, the iconic winery from Campania whose wines I haven’t tried for a while.

What a way to kick off a meal: potato beignets with anchovy mayo and parmigiano reggiano. Then two exemplary main courses, cod and mussels with curried crab sauce (a bit like a mouclade) and pork schnitzel with brown butter capers and (more) anchovies. Not many restaurants have main courses that are as good as their starters but @1yorkplace_bristol is one of them. I’ve been complaining that cookbooks only give recipes for four when most people I suspect cook for two. But is this a dish for 2 or 4? I’m inclined to think you need 2 chicken thighs per person but many would be satisfied with 1 and some might want 3. Appetites vary hugely plus it depends what else you’re serving.
